FESTIVE CRANBERRY PINEAPPLE SALAD
400g crushed pineapple in juice, undrained
2 pkg. Simply Delish Raspberry Jelly
1 can (450g) whole berry cranberry sauce
1 fresh apple, chopped
½ cup chopped Walnuts
Drain pineapple, saving juice.
Top up saved juice to measure 2 ½ cups, pour juice into saucepan and bring to the boil.
Mix 2 pkts of Simply Delish Jelly power with ½ cup cold water until completely dissolved.
Add Jelly mixture to simmering saucepan and stir in cranberry sauce.
Allow the mixture cool and start to thicken (approx. 15 min.).
Stir in apple, nuts and pineapple.
Decant into moulds and refrigerate overnight.
To serve, gently loosen the sides of the mould and tip on to serving plate.
